Ingredients of Thai Tom Yum

  1. You need of Bumbu Halus (Nam Prik Pao).
  2. It's 6 of cabe besar.
  3. It's 1 sdm of terasi.
  4. You need 6 of bawang putih, cincang kasar.
  5. You need 3 of bawang merah, cincang kasar.
  6. You need 1 sdm of sari asam jawa.
  7. Prepare 1 sdm of saus ikan.
  8. It's secukupnya of Gula merah.
  9. You need secukupnya of Minyak.
  10. You need of Bumbu Tom Yum.
  11. It's 6 of cabe keriting.
  12. You need 1 of serai, geprek, potong 3 bagian.
  13. You need 3 of daun jeruk.
  14. You need 2 sdm of santan.
  15. It's 2 1/2 sdm of bumbu halus.
  16. Prepare of Udang.
  17. You need of Bakso ikan.
  18. Prepare of Kani.
  19. It's of Salmon / ikan lain (optional).
  20. You need 2 of tomat kecil, potong-potong.
  21. Prepare of Jamur enoki.
  22. Prepare 60 ml of jeruk nipis peras.
  23. Prepare 4 sdm of saus ikan.
  24. You need secukupnya of Gula.

Thai Tom Yum instructions

  1. Mengolah bumbu halus : Potong cabe menjadi kecil-kecil, buang bijinya, sangrai di teflon hingga tepinya gosong.
  2. Masak bawang putih dan bawang merah tanpa minyak (api sedang) hingga tepinya kecoklatan.
  3. Blender semua bahan hingga konsistensi spt selai, tambahkan minyak jika campuran terlalu kering.
  4. Panaskan minyak di teflon (api sedang), masak campuran bumbu (hati2 gosong). Aduk terus hingga warna menjadi merah tua. Bumbu bisa lgsg dipakai atau disimpan di kulkas sd 6 bulan.
  5. Geprek cabai, sisihkan terlebih dahulu.
  6. Masukkan 1L air kedalam panci, serai, lengkuas & daun jeruk. Panaskan dg api besar hingga mendidih. Diamkan 2-3 menit hingga rasanya meresap. Masukkan santan dan bumbu halus. Aduk hingga tercampur rata.
  7. Masukkan udang dan/ ikan, kemudian bakso & kani, jamur, lalu tomat (masukkan bahan yg paling lama matang dulu). Masak hingga semua matang.
  8. Matikan api, tambahkan saus ikan, perasan jeruk nipis dan gula. Atur rasa sesuai selera. (Jangan tambahkan jeruk nipis saat api masih menyala nanti pahit).
